		<description>We have futures markets in other highly perishable items -- electricity, for example.&lt;br/&gt;&lt;br/&gt;I think the reason you don&#039;t see more lobbying for deregulation is self-selection: I&#039;ve worked with onion growers and wholesalers in the past, and they seem to be involved in onions partly because they like the volatility.&lt;br/&gt;&lt;br/&gt;(By the way, I forwarded my onion blog entry to the MR people, and they wrote their entry almost exactly one year later -- glad I am finally not the only person to find the onion thing fascinating).</description>
